Starch and Cellulose only differ in how the carbohydrates are linked together:
Do you know which you can digest? (hint: cellulose is common in plants)

- Disaccharides (two carbohydrates linked together; ie. sucrose)
- Two slightly different types of bonds are used.
- This makes them different enough that one you can easily digest while the other is not digested at all by humans.
